Our 4th of July treat! Pepper Ridge sandwich from Rip Esselstyn's new book My Beef with Meat: Roasted bell peppers soaked in its own juice, apple cider vinegar and added spices (garlic, dried oregano, rosemary, thyme, basil), roasted portobello mushrooms coated in barbecue sauce, green onions, avocado, hummus and greens. I wasn’t able to get the sandwich rolls from Mariposa Bakery so I used the Food for Life brown rice english muffins instead.

I love how unusual and imperfect this sandwich looks.
